Instant Churmuri chat recipe | Hachhida Mandakki - Mandalu - Puri recipe |North Karnataka style instant puffed rice chat in Kannada





 Ingredients : 





Serves 2 plates


  • Unsalted puffed rice - Bangalore Puri 4 cups
  • Menthye hittu 1 tablespoon
  • Chutney pudi 1 tablespoon
  • Cooking oil 2 tablespoon
  • Salt to taste


Veggies :


  • Finely chopped onion 1 cup
  • Finely chopped tomatoes 1 cup
  • Finely chopped cucumber 1 cup
  • Finely chopped coriander 1/2 cup


For garnishing :




  • Congress - Roasted masala peanuts 2 tablespoon
  • Mixture or Om Pudi 2 tablespoon

Procedure :




  • Take kadlepuri in a bowl.
  • Add menthye hittu, chutney pudi and salt.
  • Put in the oil.
  • Mix everything lightly taking care not to break the puffed rice.
  • You can eat this crispy preparation as it is. This also tastes great.
  • Next add the finely chopped veggies and mix again very lightly.
  • Put the mixed Puri in a serving bowl and top it with Congress kadlekai - roasted masala peanuts and mixture.

Chinese Bhel

Serves 4

Ingredients :


  • Hakka noodles 1 packet
  • Groundnut oil    2 tablespoon
  • Grated Ginger   1/2  tablespoon
  • Grated garlic     1/2 tablespoon





  • Finely chopped onions 2
  • Finely chopped spring onions 2 cups
  • Carrots julienned  3
  • Capsicum cut into thin long pieces 2
  • Shredded cabbage into juliennes
  • 2 cups
  • Boiled American sweet corn  2 cups ( optional )

  • Tomato sauce 1 1/2 tablespoons
  • Schezwan sauce 1 tablespoon
  • Soya sauce 1 tablespoon
  • Chilli vinegar 1 tablespoon
  • Groundnut oil 1/2 liter 
  • Black pepper powder 1 teaspoon ( optional )
  • Salt to taste

Preparation :

PS : You can do the following preparation work in advance so that the noodles are cooked and are dry for frying. Suppose you want to prepare this for evening snacks, you can finish off this work in the afternoon and keep it ready.



  • In a big bowl bring water to boil and put in a spoon of oil and little salt.
  • Put the hakka noodles in boiling water and let it cook for 5 minutes till the noodles become soft. Take care not to cook too much else they will become soggy.
  • Switch off the gas, stain the noodles and pour cold water on the noodles to stop them cooking further.
  • Spread the noodles in a big plate and let them cool.

  • Boil the sweet corns either on gas or in oven and keep them ready.

  • Heat the groundnut oil in a thick bottomed kadai.
  • Deep fry the noodles in groundnut oil till golden brown and set aside.

  • In a thick bottomed kadai heat groundnut oil.
  • Add finely chopped onions and saute for a minute.
  • Add finely chopped spring onions, ginger, garlic and saute for a minute.
  • Put in all the julienned vegetables, boiled sweet corn and saute for one more minute.
  • Take care to put down the gas heat and not to saute the vegetables too much as they have to remain very crunchy and fresh.
  • Put in Tomato sauce, Schezwan sauce, Soya sauce and mix well. You can add these directly here or mix all the three in a cup, stir well and the pour to the kadai.
  • Now add two spoons chilli vinegar and mix well.
  • Now add a little pepper powder and salt and mix well.
  • Break the fried noodles and mix everything lightly.
  • Garnish with finely chopped spring onions. Serve your yummy, tangy Chinese Bhel immediately.

Mango Bhel Puri Chat

Preparation time 30 minutes

Serves 4

Ingredients :

For Sour/hot/meetha Chatni :

Jaggery 1 cup
Thick tamarind juice 1 cup
Green chillies 4-6 depends on your taste
Black pepper 10-15
Jeera 1 tablespoon
Pudina - mint leaves a handful

Salt to taste





Vegetables:


Nicely chopped totapuri mango pieces 1 cup
Finely chopped onions 1 cup
Grated carrots 1 cup
Finely chopped cucumber 1 cup
Nicely cut tomatoes 1/2 cup
Finely chopped coriander 1/2 cup

Savouries :




Nippattu 4
Congress kadale beeja 1 cup
Ompudi ( thin sev) 1 cup
Chow chow mixture. 1 cup

Puffed rice - Bangalore Puri 2 liters




Preparation :




Grind all the ingredients of the meetha into nice thick chutney.

Note : Instead of mixing entire bhel puri in one stroke, you can add in installments as and when required so that it tastes fresh and crunchy.

In a big bowl put in 2 tablespoons of meetha, a pinch of salt, a handful of all the nicely chopped vegetables and mix well.
Now mix crushed nippattu, Congress and chow chow and mix again.
Then add the kadlepuri and mix lightly.
Serve on the plate and garnish with ompudi and finely chopped coriander.

Mango Chaat

Preparation Time 15 Minutes

Ingredients :


  • Boiled sweet corn 1 cup
  • Kadle Puri ( Bangalore Puri ) 2 cups
  • Sev 1 cup
  • Red chilli powder 1/2 teaspoon
  • Chat masala 1/2 teaspoon
  • Salt to taste


  • Totapuri mango finely chopped pieces 1 cup
  • Nicely chopped onion 1
  • Nicely grated carrot 1
  • Finely chopped coriander 1 tablespoon



Procedure :


  • In a bowl add all the above veggies with salt, red chilli powder and chat masala and mix well.
  • Then mix the boiled sweet corn.
  • Finally add the Kadle Puri and mix lightly.
  • Serve fresh, garnished with sev and chopped coriander leaves.

  • PS : Instead of sweet corn you can also use boiled groundnuts.

Papad Cone Chaat recipe | sweetcorn chat in masala papad cone | papad katori chaat | Masala happala cone with corn chaat


These Yummy Papad Cones filled with Masala Sweet Corn serve as a great starter or yummy evening snacks or a show stopper for a fun filled party.

Preparation Time 20 Minutes
Cooking Time       10 Minutes

Ingredients :



  • Masala Papads 10
  • Sweet Corn         1 packet
  • Finely chopped onions 2
  • Finely chopped carrots 2
  • Finely chopped tomato 1
  • Finely chopped capsicum 1
  • Finely chopped coriander  1 cup
  • Lemon 1
  • Butter 2 cubes
  • Chilli flakes 1 tablespoon
  • Chaat masala 1 tablespoon
  • Salt to taste


Procedure :




  • Cut the masala papad into halves.
  • Heat the tava.
  • Dry roast the papad by pressing it on the tava using a cloth.
  • When it is roasted on both the sides immediately take it on the cloth in your left hand and turn it into a cone with your right hand. ( Please watch the video to know how to make the papad cone )
  • Place the cone in a glass or steel cup for a minute so that it retains the shape.
  • Make the cones for all the papads and set aside.
  • Boil the sweet corns for 5 to 6 minutes till they are fully cooked.
  • Drain them and set aside.
  • Heat the butter in a thick bottomed pan, add the cooked corn and saute for a minute.
  • Now in a bowl add the corns, all the chopped vegetables, chilli flakes, chaat masala, salt and squeeze the lemon.
  • Mix well and adjust the heat and salt. Instead of chilli flakes you can also add the finely chopped green chillies.
  • Now take the roasted papad cone and fill the masala corn into it.
  • Serve fresh corn papad cone as a starter or enjoy as an evening chaat.

Bhelpuri

You know the good old Bhelpuri has as many recipes as the eaters. And each one is unique and tastes equally good. In fact it can be prepared even without a recipe. Really.
Just take the core ingredient, the kadlepuri - puffed rice - add any fresh veggies you can put your hands on, toss in some savouries and a dash of sweet and sourness and lo and behold you will have people fighting over for it.
I have my own recipe for Bhelpuri. It represents me and how I want my life to be - sweet, hot, sour and tangy. Precisely.
So give a break to your recipe and try mine. I bet you would want to add this to your favorites.


Preparation time 30 minutes

Serves 4

Ingredients :

For Sour/hot/meetha Chatni :

This is one of the tasty and healthy North Indian snacks like Masala Puri, Tikki Puri and Dahi Puri.

MASALA PURI

This is King among the North Indian chats like pani puri, dahi puri, tikki puri and corn tikki.                                                       
Ingredients    :

Dry peas                                                    2 cups
Potato                                                        2
Onion                                                        4
Tomato                                                      2
Tamarind                                                   1 lime size
Jaggery                                                      1 lime size
Groundnut oil                                             1 tablespoon
Red chilly powder                                       ½ table spoon
Garam masala powder                                ½ table spoon
Pudina                                                       some leaves
Green chilly                                               2
Coriander leaves                                        finely chopped
Curry leaves                                             10-15 leaves
Jeera                                                        1 teaspoon
Black pepper                                             1 tea spoon
Om pudi                                                   1 packet
Ready made poories of masala puri
Salt to taste.


DAHI PURI

Ingredients :

Dry peas                         100 gm
Onion finely chopped        4
Carrot                             2 grated
Pudina                             Few leaves
Coriander leaves              1 small bunch
Tamarind                         1 lime size
Jaggery                           1 lime size
Jeera                               1 teaspoon
Black pepper                    1 teaspoon
Green chillies                   2
Red chilly powder             1 teaspoon
Om pudi                          1 packet
Sweet curds                     1 packet  ( If you like sweetish flavour add sugar depending on your taste. )
Salt to taste.


TIKKI PURI

CORN TIKKI

Ingredients :

Red chilly powder                                      ½ tablespoon
Pudina                                                       some leaves
Green chilli                                                2
Coriander leaves                                        finely chopped
Curry leaves                                              10-15 leaves
Jeera                                                        1 teaspoon
