ನೆಲ್ಲಿಕಾಯಿ ಉಪ್ಪಿನಕಾಯಿ - North Karnataka style Amla pickle

 


ನೆಲ್ಲಿಕಾಯಿ ಉಪ್ಪಿನಕಾಯಿ 

ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು:


ನೆಲ್ಲಿಕಾಯಿ – 500 ಗ್ರಾಂ

ಉಪ್ಪು – 4–5 ಟೇಬಲ್ ಚಮಚ (ರುಚಿಗೆ ತಕ್ಕಂತೆ)

ಅರಿಶಿನ ಪುಡಿ – ½ ಟೀ ಚಮಚ

ನಿಂಬೆ ರಸ – 4 ಟೇಬಲ್ ಚಮಚ


ಖಾರದ ಪುಡಿ ತಯಾರಿ:


ಸಾಸಿವೆ – 2 ಟೇಬಲ್ ಚಮಚ

ಮೆಂತ್ಯೆ – 1 ಟೀ ಚಮಚ

ಅಚ್ಚ ಖಾರದ ಪುಡಿ – 5–6 ಟೇಬಲ್ ಚಮಚ (ಖಾರದ ಮಟ್ಟಕ್ಕೆ ತಕ್ಕಂತೆ)

ಹಿಂಗು – ½ ಟೀ ಚಮಚ


ಒಗ್ಗರಣೆಗೆ:

ಶೇಂಗಾ ಎಣ್ಣೆ (ಗ್ರೌಂಡ್‌ನಟ್ ಆಯಿಲ್) – ½ ರಿಂದ ¾ ಕಪ್

ಸಾಸಿವೆ – 1 ಟೀ ಚಮಚ

ಕರಿಬೇವು ಎಲೆಗಳು – 10–12


ವಿಧಾನ

1. ನೆಲ್ಲಿಕಾಯಿ ತಯಾರಿ:


ನೆಲ್ಲಿಕಾಯಿಗಳನ್ನು ಚೆನ್ನಾಗಿ ತೊಳೆದು ಬಟ್ಟೆಯಿಂದ ಒಣಗಿಸಿಕೊಳ್ಳಿ.

ಉಪ್ಪಿನಕಾಯಿಗೆ ತೇವ ಇರಬಾರದು.

ಸಣ್ಣ ಕತ್ತರಿಸಿದರೆ ಉತ್ತಮ; ಅಥವಾ ಸುತ್ತು ಪೂರ್ಣವಾಗಿ ಇಡಬಹುದು.

2. ಪುಡಿ ತಯಾರಿ:

ಸಾಸಿವೆ ಹಾಗೂ ಮೆಂತ್ಯೆ ಬೀಜಗಳನ್ನು ಪ್ರತ್ಯೇಕವಾಗಿ ಘಮ ಬರುವವರೆಗೆ ಹುರಿದುಕೊಳ್ಳಿ.

ತಣ್ಣಗಾದ ಮೇಲೆ ಅದನ್ನು ಸಣ್ಣ ಪುಡಿಯಾಗಿ ರುಬ್ಬಿಕೊಳ್ಳಿ.

3. ಮಸಾಲೆ ಮಿಶ್ರಣ:

ಒಂದು ಪಾತ್ರೆಯಲ್ಲಿ ಸಾಸಿವೆ–ಮೆಂತ್ಯೆ ಪುಡಿ, ಅಚ್ಚ ಖಾರದ ಪುಡಿ, ಅರಿಶಿನ, ಹಿಂಗು ಹಾಗೂ ಉಪ್ಪನ್ನು ಸೇರಿಸಿ ಮಿಶ್ರಣ ಮಾಡಿ.


4. ಒಗ್ಗರಣೆ:


ಕಡಲೆ ಕಾಯಿ ಎಣ್ಣೆಯನ್ನು ಕಾಯಿಸಿ.

ಕಾವೇರಿದಾಗ ಸಾಸಿವೆ ಹಾಕಿ ಸಿಡಿಸಿದ ಬಳಿಕ ಕರಿಬೇವು ಹಾಕಿ.

ಚೆನ್ನಾಗಿ ತಣ್ಣಗಾಗಲು ಇಡಿ (ಬಿಸಿ ಎಣ್ಣೆ ಹಾಕಬೇಡಿ).


5. ಮಿಶ್ರಣ:


ನೆಲ್ಲಿಕಾಯಿಗಳನ್ನು ದೊಡ್ಡ ಪಾತ್ರೆಯಲ್ಲಿ ಹಾಕಿ.

ಮಸಾಲೆ ಮಿಶ್ರಣವನ್ನು ಸೇರಿಸಿ ಚೆನ್ನಾಗಿ ಬೆರೆಸಿ.

ನಂತರ ತಣ್ಣಗಾದ ಎಣ್ಣೆಯನ್ನು ಅದರ ಮೇಲೆ ಸುರಿದು ಮತ್ತೆ mix ಮಾಡಿ.


ಎಣ್ಣೆ ಎಲ್ಲ ನೆಲ್ಲಿಕಾಯಿಗೂ ತಾಗುವಂತೆ ಇರಲಿ.

ಸ್ವಚ್ಛವಾದ ಬಾಟಲಿಯಲ್ಲಿ ಅಥವಾ ಜಾರದೊಳಗೆ ಇಡಿ.


ಮೂರು–ನಾಲ್ಕು ದಿನ ರೂಮ್ ಟೆಂಪರೇಚರ್‌ನಲ್ಲಿ ಇಟ್ಟು ದಿನಕ್ಕೆ ಒಮ್ಮೆ ಒಣ ಚಮಚದಿಂದ ಕಲಿಸಿ ಆಮೇಲೆ ಬಳಸಬಹುದು.


Important :


ಉಪ್ಪು ಮತ್ತು ಎಣ್ಣೆ ಸರಿ ಪ್ರಮಾಣದಲ್ಲಿ ಇದ್ದರೆ 3–4 ತಿಂಗಳು ಚೆನ್ನಾಗಿ ಇರುತ್ತದೆ.

ಬಾಟಲಿ ಯಾವಾಗಲೂ ಒಣಗಿರಬೇಕು.

ಸ್ವಲ್ಪವೆ ಬೆಲ್ಲ ಸೇರಿಸಿದರೆ ಸಿಹಿ–ಖಾರ ರುಚಿ ಬರುತ್ತದೆ.

ಬೇಕಿದ್ದರೆ ಹಸಿಮೆಣಸಿನಕಾಯಿ ಕೂಡ ಹೆಚ್ಚಿ ಸೇರಿಸಬಹುದು.

Tomato Thokku recipe | Thakkali thokku | Spicy tangy Tomato pickle recipe in Kannada


Ingredients :


  • Ripe tomatoes     10-15
  • Tamarind  100 gm
  • Jaggery     100 gm
  • Red chilli powder 1 cup
  • Turmeric powder 1/2 tablespoon
  • Asafoetida 1/2 teaspoon
  • Jeera 1 teaspoon
  • Red chillies 5-6
  • Roasted mustard powder 1 tablespoon
  • Roasted methi powder 3/4 tablespoon

  • Curry leaves 
  • Cooking oil 1 1/2 cup
  • Salt to taste

Procedure :


  • Wash and pat dry the tomatoes completely. See that there is absolutely no water or wetness.
  • In a thick bottomed kadai, dry roast the mustard seeds and methi seeds separately.
  • Let them cool and grind to fine powder.
  • Chop the tomatoes.
  • Heat half of the oil in a thick bottomed kadai.
  • Add tomatoes and cook them in low heat.
  • When the tomatoes start turning soft, add tamarind and continue to cook.
  • Keep stirring and cook till the tomatoes become soft and mushy and the oil separates.
  • Let it cool completely.
  • Once it cools down, grind it into fine paste and remove to a bowl.
  • To this paste add red chilli powder, turmeric powder, ground  methi and mustard powder.
  • Add salt and mix everything well.
  • Again heat a thick bottomed kadai.
  • Add the remaining cooking oil.
  • Add mustard seeds.
  • Once they splutter, add jeera and asafoetida.
  • Add dry red chillies and curry leaves.
  • Lower the heat and add the tomato paste.
  • Add jaggery and mix well.
  • Now cook for another 5 to 6 minutes over low heat.
  • Once the Thokku turns aromatic, switch off the heat.
  • Once it cools down, store it in an airtight jar.
  • It lasts for almost a month in refrigerator or upto week otherwise.
  • Enjoy with piping hot rice and ghee, with curd rice or with chapati, dosa and rotis.

Lemon green chilli pickle recipe | nimbu mirch ka achar | ನಿಂಬೆ ಹಸಿಮೆಣಸಿನ ಕಾಯಿ ಉಪ್ಪಿನಕಾಯಿ | Easy lemon pickle - grandma's recipe

 


Ingredients :




  • 20 ripe lemons
  • A little more than 1/2 paavu sugar 
  • A little more than 1/2 paavu salt
  • Around 200 grams green chillies - alter the quantity according to your taste and preference.
  • 2  tablespoon fried methi powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Hing or asafoetida

Procedure :





  • First and foremost, wash and completely dry all the utensils, knife and glass jars you are using to make and keep the pickles.
  • Wash and completely clean dry - even a day in advance - all your lemons and chillies 
  • Heat a kadai.
  • Dry roast a small cup of methi seeds.
  • Grind to a nice powder and keep it aside.
  • Slit the green chillies into two and set aside.
  • Cut ten out of twenty lemons into halves and squeeze the juice with lemon juicer. Don't squeeze completely. Let some juice remain in the lemons.
  • Keep the juice aside.



  • Now cut the squeezed ten lemons and the other ten lemons into small pieces and put in a big vessel.
  • To this add salt, sugar, slit green chillies, roasted methi powder, turmeric powder and hing.
  • Mix everything well.
  • Add the lemon juice and mix again.
  • Keep it covered for about twenty four hours.
  • Next day the pickle would have juiced and spices mixed nicely.
  • Mix it once again and keep it in a clean and totally dry glass jar with the lid covered tightly.
  • After a week or so, once again mix the pickle with a dry spatula or spoon and keep it again covered in an airtight jar for about 20-25 days.
  • Afterwards the pickles would mature and turn nice and soft absorbing all the spices and the juice.
  • Enjoy the sweet, tangy and spicy pickle with your favourite dish.
  • This pickle can be stored without refrigeration upto a year or two.

Heerekai sippe chatni recipe - Ridge gourd peel chatni recipe

Ingredients :





Heerekai sippe - Ridge gourd peel   1 bowl
Green chillies                                10 - Adjust according to your taste
Coriander leaves a few
Groundnut seeds                           1 cup
Groundnut oil                                1 tablespoon
Jeera.                                           2 teaspoon
Asafoetida                                    1/4 teaspoon
Turmeric powder                           1/4 teaspoon
Salt to taste 

Procedure :



  • Dry roast the groundnut.
  • In a thick bottomed bowl heat oil.
  • Add jeera, asafoetida and turmeric powder.
  • Lower the heat.
  • Immediately add green chillies, ridge gourd peal, coriander leaves and saute for a minute.
  • Add very little water, mix well and cook with a lid covered for a few more minutes over low heat.
  • Cook for five minutes, check that the peal is cooked well and switch off the gas.
  • Now in the mixie, first grind the roasted groundnut.
  • Then add the cooked ridge gourd peal and salt.
  • Grind the chutney to a coarse consistency.
  • Add a few drops of water while grinding, if required.
  • Serve with roti, chapati, phulka and akki or ragi rotti.
  • It also tastes yummy with piping hot rice and ghee. Or with curd rice.

Bajji Menasinakai chutney | Fritters Chilli chutney | Bajji Milagai chutney



  




Ingredients :

  1. Bajji Menasinakai            20 to 25
  2. Green chilli                        1 or 2 depending on how much spice you like
  3. Nati Kottambari soppu   1 small bunch
  4. Cooking oil                        2 tablespoon
  5. Jeera                                  1 tablespoon
  6. Methi seeds                      1/4 tablespoon
  7. Hing                                    1/2 teaspoon
  8. Turmeric Powder             1/2 teaspoon
  9. Salt to taste

Procedure :


  • Wash and cut the Bajji Menasinakai into medium sized pieces.
  • Wash and finely chop the coriander.
  • Heat oil in a thick bottomed kadai.
  • When oil is heated, add methi seeds, jeera, hing and turmeric powder.
  • Next add one green chilli and all the cut bajji chillies.
  • Saute for a few minutes.
  • Now add chopped coriander leaves and mix well.
  • Lower the heat and cook the chilli pieces with a lid covered.
  • Once the chillies are fully cooked, switch off the gas and let it cool.
  • Once it is cooled down, add the salt and grind the chutney to a coarse consistency.
  • Serve with hot rice and ghee, Dosa and chapati.

Gongura Chutney recipe - Gonkura Soppina Chutney -Andhra Special Gongura Pachadi | Sorrel Leaves Chutney | Andhra Pachadi





Ingredients :



  • Gongura leaves de-stemmed and  washed      1 bowl
  • Green chillies              10 -15   depending on your liking and taste
  • Curry leaves  -            A handful
  • Jaggery                      1 small cup
  • Groundnut oil              2 tablespoon
  • Mustard seeds             1 teaspoon
  • Jeera                          1 tablespoon
  • Asafetida                    1/2 teaspoon
  • Turmeric powder         1/2 teaspoon
  • Salt to taste





  • Procedure :



  • Heat oil in a kadai, add jeera, hing and green chillies.
  • Next add the Gongura leaves.
  • Saute for five minutes till the leaves are cooked. 
  • Switch off the gas and let it cool.
  • Once the mixture cools down, grind the above mixture along with jaggery and salt to a fine paste.
  • Heat a tablespoon of groundnut oil in a kadai.
  • Add mustard seeds and let them splutter.
  • Add asafoetida and turmeric powder.
  • Add curry leaves.
  • Pour in the grounded chutney.
  • Serve with Rotis, Chapatis, Dosa, Poori and piping hot rice with ghee.

It tastes amazing with everything and can be saved in a fridge up to 10 days, provided it's not finished off on the first day itself!

Heralekayi Uppinakayi recipe | Citron Lime Pickle | Heralekai pickles | Karnataka foods

Ingredients :


Heralekayi - Citron Lime 5
Sugar 1/2 cup
Red chilli powder 1/2 cup
Roasted Methi seeds powder 1/4 cup
Turmeric Powder 1 teaspoon
Hing - Asafoetida 1 tablespoon
Salt to taste

Procedure :



  • Cut the Heralekai and take out the juice of one Heralekayi. You can cut the skin into pieces and add to the pickles.
  • Cut the other four Heralekayi into small pieces.
  • In a mixing bowl, add the Heralekayi pieces, red chilli powder, roasted methi powder, sugar, salt, turmeric powder and asafoetida and mix well.
  • Cover the bowl and set aside overnight.
  • In the morning the pickles becomes juicy.
  • Mix well again and store in an airtight glass jar or bottle.


Serve with rice, ghee and chapati.

Coriander Chutney - Kothambari Soppina Chutney - Cilantro Chutney - Dhaniya Chutney Recipe

Ingredients :


  • Chopped coriander        1 bowl
  • Green chillies                10 - depending on your liking
  • Curry leaves  -              A handful
  • Tamarind juice              1 small cup
  • Jaggery                        1 small cup
  • Groundnut oil                2 tablespoon
  • Mustard seeds               1 teaspoon
  • Jeera                            1 tablespoon
  • Asafoetida                     1/2 teaspoon
  • Turmeric powder           1/2 teaspoon
  • Salt to taste


Recipe Video :






Procedure :


  • Wash and chop coriander.
  • Heat oil in a kadai, add jeera, hing and green chillies.
  • Saute for 2 minutes.
  • Grind the above mixture along with chopped coriander and tamarind juice to a fine paste.


  • Heat a tablespoon of groundnut oil in a kadai.
  • Add mustard seeds and let them splutter.
  • Add asafoetida and turmeric powder.
  • Next pour in the above grounded mixture.
  • Put in the jaggery powder and salt and cook it on low heat, stirring regularly.
  • When it's boiling add curry leaves and cook more.
  • Cook for five to ten minutes till the raw smell of coriander disappears and the chutney thickens.
  • Serve with Rotis, Chapatis, Dosa, Poori and piping hot rice with ghee.





It tastes amazing with everything and can be saved in a fridge up to 10 days, provided it's not finished off on the first day itself!

Nellikai thokku recipe | how to make amla thokku | gooseberry thokku | nellikayi chatni recipe

I know just looking at the heading, reading the word thokku is making you to salivate. Of course, who would not like to have thokku, that too with some tadka along with piping hot rice and ghee or with yummy curd rice!

We all are too familiar with hunasekai thokku, but today I am sharing with you the recipe for Nellikai thokku.




Since Amla is a fibrous fruit, generally we don't get the consistency of Hunasekai thokku while making thokku from Nellikai or Amla. However with some trial and error experiments, I have been able to reach a consistency which is very much like Hunasekai thokku. Nice, smooth and sticky!
How? Here you go!!!



Preparation Time      30 minutes
Grinding time             10 minutes

Ingredients :


  • Nellikai or Amla.         20
  • Green chillies.             100 grams depending upon your liking.
  • Methi seeds.               1 tablespoon
  • Lemon juice                1 tablespoon
  • Asafoetida.                  1 teaspoon
  • Turmeric powder        1 tablespoon
  • Salt to taste

For tadka


  • Groundnut oil.             1 tablespoon
  • Mustard seeds            1 teaspoon
  • Asafoetida                   1 teaspoon
  • Curry leaves                 10-15

Procedure :




  • Dry roast and powder the methi seeds.
  • Grate the amlas. Here I would like to tell you that sometimes we are under the impression that grating the amlas can be very time consuming. On the contrary, since amlas are light and fibrous, it's very easy to grate them.
  • Then, in a mixie jar, grind the amlas, chillies, methi powder, hing, turmeric powder and salt to a fine paste.
  • Now add the lemon juice in the mixie jar and let it rest for 20 minutes.
  • Again grind to a fine paste.
  • Because of the resting and then adding the lemon juice, the thokku will turn into nice sticky paste.
  • Store the thokku in an air tight container.
  • You can add the tadka only to a small portion as and when you are using the thokku so that it always tastes fresh and yummy.

Kadale beejada ( Groundnut ) chatnipudi

Ingredients:

Kadale beeja (Groundnut seeds)     2 big cups
Chana Dal                                     1 cup
Urad dal                                        3/4 cup
Grated dry coconut powder             1 cup
Tamarind                                       1 lemon size
Jaggery                                         3/4 lemon size
Red chilli powder                                         1 cup (Use only red chilli powder - It gives colour and won't be very hot)
Salt to taste.
  • Roast to golden brown all the above ingredients separately excluding Jaggery and salt.
  • You may peel the skin of the groundnut seeds, but in fact it's good for health and need not be abandoned.
  • Ground everything including Jaggery and salt to a slightly coarse powder.
Keep in an airtight container.
