Menthe hittina gojju recipe - Sweet and sour side dish with huggi | Menthe gojju recipe in Kannada



Gojju #1 Menthe hittina huli sihi gojju

Serves 2


Ingredients :




  • Menthe hittu 3 tablespoon
  • Tamarind juice (Hunase hannina rasa) 1 tablespoon
  • Jaggery powder 1 tablespoon
  • Cooking oil 2 teaspoon
  • Mustard seeds 1/2 teaspoon
  • Asafoetida 1 pinch
  • Turmeric powder 1/4 teaspoon
  • Majjige menasinakayi 3-4
  • Curry leaves a few
  • Coriander leaves a few
  • Salt to taste

Procedure :




  • Soak jaggery powder in a water and make its juice.
  • In a bowl take tamarind juice.
  • To this add the jaggery juice.
  • Mix the menthe hittu to this and stir to see that no lumps are formed.
  • Add salt.
  • In a thick bottomed kadai heat oil.
  • Add mustard seeds and when they splutter, add hing and turmeric powder.
  • Lower the heat.
  • Add majjige menasinakayi - curd chilli - and fry to golden brown.
  • Add curry leaves and switch off the heat.
  • Add this tadka to menthe hittina gojju. 
  • Crush the chillies coarsely and mix into the gojju.
  • Garnish with finely chopped coriander and serve with piping hot rice and a spoon of desi ghee.


Gojju #2 Menthe hittina kharada mosaru gojju


Serves 2


Ingredients : 




  • Menthe hittu 2 tablespoon
  • Thick curds 2 tablespoon
  • Water to mix
  • Cooking oil 2 teaspoon
  • Mustard seeds 1/2 teaspoon
  • Asafoetida 1 pinch
  • Turmeric powder 1/4 teaspoon
  • Majjige menasinakayi - curd chilli - 3-4
  • Curry leaves a few
  • Coriander leaves a few
  • Salt to taste

Procedure :




  • In a bowl take the curds.
  • Add 1 to 1 1/2 cups of water and whisk to smooth buttermilk.
  • To this add 2 tablespoons of menthe hittu.
  • Add salt.
  • In a thick bottomed kadai heat oil.
  • Add mustard seeds and when they splutter, add hing and turmeric powder.
  • Lower the heat.
  • Add majjige menasinakayi - curd chilli - and fry to golden brown.
  • Add curry leaves and switch off the heat.
  • Add this tadka to menthe hittina gojju.

Instant sambar recipe | Instant sambar without dal for Idli dosa | udupi hotel style instant sambar for idli

 


Ingredients :

For sambar powder :




  • Coriander seeds 2 tablespoon
  • Channa dal 1 tablespoon
  • Urad dal 1 tablespoon
  • Jeera 1 teaspoon
  • Methi seeds 1/2 teaspoon
  • Red chilli ( byadagi ) 20


For tadka :


  • Oil 1 tablespoon
  • Mustard seeds 1 teaspoon
  • Hing 1/4 teaspoon
  • Turmeric powder 1/4 teaspoon

  • Grated fresh coconut 1 cup
  • Jaggery 1 tablespoon
  • Oil 1 tablespoon
  • Salt to taste


Vegetables :




  • Peeled potato pieces 1 small cup
  • Chopped onion 2  cups
  • Chopped tomato 2 cups
  • Curry leaves
  • Coriander leaves

Procedure :


  • Dry roast channa dal, urad dal, coriander seeds, cinnamon and red chillies.
  • Powder them in a mixie and set aside.
  • Heat 1/2 tablespoon oil in kadai.
  • Add 1 cup onion pieces and saute for a minute.
  • Now add 1 cup tomato pieces, coriander leaves and saute for another minute till they soften.
  • Switch off the gas. Let it cool.
  • Once it cools down, add the sauteed onion and tomato, grated coconut to the dry roasted and ground masala powder, add a little water and grind more till it's fine paste.
  • Cook the potatoes in a cooker to two whistles.



  • In a thick bottomed kadai, heat 1 tablespoon oil. Add mustard seeds and let them splutter.
  • Now add asafetida and turmeric powder.
  • Add another cup pieces of onion and saute till they are soft.
  • Add another cup tomato pieces and cook further till they also turn soft.
  • Now add the boiled potato pieces.
  • Add some water and let it simmer.
  • While it's boiling, add curry leaves and coriander leaves.
  • Now mix water to the ground masals and pour into the kadai.
  • Let is boil and add required quantity of water to a suitable consistency. Add jaggery powder, salt and boil for another 5 minutes.
  • Serve hot with idlis.

Pepper rasam recipe | How to make Menasina saaru | milagu rasam | jeera pepper rasam recipe






Ingredients :

  • Black pepper - Menasu 1 tablespoon
  • Rice 1 tablespoon
  • Grated dry coconut 1 tablespoon
  • Wheat or dalia or atta ( optional ) 1/2 tablespoon
  • Ghee 1 tablespoon
  • Jeera 1 teaspoon
  • Hing 1/4 teaspoon
  • Turmeric Powder 1/2 teaspoon
  • Red chillies 4
  • Jaggery 1 tablespoon
  • Curry leaves
  • Coriander leaves
  • Salt to taste

Procedure :




  • Heat a thick bottomed small kadai.
  • Dry roast pepper.
  • When they start spluttering add rice and fry.
  • When the rice start changing the colour add grated dry coconut and Dalia and fry again till everything turns aromatic and golden brown.
  • Switch off the gas and transfer everything to a mixie jar.
  • Grind to fine powder without adding water.
  • When it becomes nice powder, add 1/2 cup of water and grind to a fine paste.
  • Take off from the mixie and add more water and mix well.
  • Heat ghee in a thick bottomed kadai.
  • Add jeera, hing and turmeric powder.
  • Add red chillies and saute for a minute.
  • Pour in the ground mix and add more water according to your required consistency and quantity.
  • When it starts boiling add jaggery, salt, curry leaves and coriander leaves.
  • Boil for 8-10 minutes till the rasam turns aromatic.
  • Serve hot with hot rice and ghee.
